発酵を行います。発酵の進行段階に応じて、1日2回、10～15分間の短時間のポンピングオーバー（循環）を行い、果皮への負担を控えながら、ワイ発酵期間は約6～8日間。初期は15～16℃、一時は20～22℃、終盤は26～27℃まで段階的に温度を上げ、最終段階では冷却を止めて発酵を完了させます。じ畑のワインタンクを満たしますし、果皮とワインを接触させた状態で12～15日間のマセラシオン（醸し）を行ったのち、澱引きされます。このマセラシオン期間中は、温度を約20～22℃に管理し、微量の酸素を溶解させるマイクロオキシジェナシオン（微量酸素供給）を行いますマロラクティック発酵はステンレスタンク内で行われ、その後澱をしっかりと取り込んでフレンチオーク樽へ移され、16か月間熟成されます。熟成はアリエ産オークの新樽100％を使用します。
