Minim Amber 2025 Sangiovese A VSOP Grande Champagne cognacA skin contact (amber orange) wine from Minim Wine, the label of Tim Sproal made at the Boomtown co operative in Castlemaine, Central Victoria. The 2025 'Amber' is a blend of Pecorino fermented on skins for 14 days with a smaller portion of Fiano, sourced from the Chalmers vineyard at North Heathcote and handled oxidatively, then aged over winter in seasoned barrels.
